Terrina fria de Merluza al azafrán con salsa tártara y anchoas
Ingredientes
4 porc.
Merluza Puglisi 1 lata
Puerro 2 u
Zanahoria 1 u
Manteca 50 gr
Azafrán 1 u
Huevos 2 u
Sal y pimienta
Crema 100 cc
Salsa
Mayonesa 100 gr
Picklets 50 gr
Huevo 1 u
Anchoas Puglisi 2 u
Perejil c/n
Paso a paso
- Rehogar puerro picado y zanahoria rallada en manteca, incorporar la merluza Puglisi, con los huevos y la crema. Condimentar.
- Llevar la preparación a una budinera previamente enmantecada y llevar a horno baño maría 25 min. Dejar enfriar y servir.
- Mezclar la mayonesa con picklets, huevo duro y las anchoas Puglisi picadas. -
Tartines cremosos de atún con tomates confit
Ingredientes
4 porc.
Masa
Harina 0000 200 gr
Manteca 40 gr
Agua c/n
Sal c/n
Relleno
Atún Puglisi 1 lata
Manteca 50
Tomates 2 u
Puerros 2 u
Huevos 3 u
Queso crema 100 gr
Queso sardo 150 gr
Sal y pimienta.
Paso a paso
- Para hacer la masa, mezclar todos los ingredientes, dejar enfriar y formar una tartera.
- Para prepara el relleno rehogar en manteca el puerro, agregar el atún y los huevos mezclados con el queso crema.
- Colocar el relleno sobre la masa, agregar tomates, queso rallado para gratinar y llevar a horno 25 min. -
Croquetas de Caballa y champignones con mayonesa de remolacha y jengibre
Ingredientes
3 porc.
Caballa Puglisi 1 lata
Manteca 30
Cebolla 1 u
Champignones 100 gr
Huevos 2 u
Harina 125 gr
Sal y pimienta
Nuez moscada c/n
Queso rallado 50 gr
Salsa
Limón 1 u
Remolacha 1 u
Aceite de girasol 100
Jengibre
Paso a paso
- Rehogar con ajo picado la espinaca, incorporar la merluza, dejar enfriar y mezclarles harina, huevos, queso rallado y condimentar.
- Cocinar fritas o al horno.
- Para la salsa, procesar remolacha hervida con jugo de limón, jengibre picado y aceite, hasta que tenga consistencia de mayonesa. -
Merluza gratinada con espinaca
INGREDIENTES
2 PORC
Merluza Puglisi 1 lata
Manteca 25 gr
Ajo 1 diente
Espinaca 1 atado
Harina 30 gr
Sal, pimienta y nuez moscada c/n
Leche 200 cc
Crema 100 gr
Queso parmesano 100gr
Paso a paso
- Rehogar con ajo picado la espinaca, agregar harina, la leche y cocinar hasta que se espese.
- Incorpora la crema.
- Disponer en una bandeja de horno la merluza, cubrir con la salsa, agregar el queso rallado y llevar a horno a gratinar.
